Ingredients

  • 2 corn tortillas
  • 2 eggs
  • 1 cup tomato salsa (salsa ranchera)
  • 1 tbsp olive oil
  • ½ cup refried beans
  • Salt and pepper to taste
  • Fresh cilantro and avocado slices for garnish

Instructions

  1. Warm the tortillas in a dry pan and set aside.
  2. In another pan, fry the eggs sunny-side up.
  3. Pour salsa into a small saucepan and heat until simmering.
  4. Place tortillas on a plate, spread beans, top with eggs, and pour warm salsa over them.
  5. Garnish with avocado and cilantro.
