Filipino Breakfast

Filipino breakfast, locally called “almusal”, is a vibrant mix of flavors, textures, and cultural heritage. Known for its hearty portions and rich combinations of rice, protein, and tropical sides, breakfast in the Philippines reflects the warmth and hospitality of Filipino households.

Chicken Tocino

A sweet and savory dish made by marinating chicken in a mixture of sugar, soy sauce, garlic, and pineapple juice. It’s caramelized to perfection and served with garlic fried rice and sunny-side-up eggs.

Ingredients:

  • 500g boneless chicken thighs or breast (sliced thin)
  • 3 tbsp brown sugar
  • 2 tbsp soy sauce
  • 3 tbsp pineapple juice
  • 1 tbsp vinegar
  • 3 cloves garlic (minced)
  • 1 tbsp cooking oil
  • Salt and pepper to taste

Instructions:

  1. Mix all marinade ingredients in a bowl.
  2. Add chicken slices and marinate for at least 4 hours or overnight.
  3. In a pan, add 1 tbsp oil and cook marinated chicken over medium heat.
  4. Allow sauce to caramelize and chicken to brown slightly.
  5. Serve with garlic fried rice (sinangag) and egg (itlog).
