Chicken Fried Rice

Chicken fried rice is one of those comfort dishes that never disappoints. But instead of the usual takeout style, this version brings a unique twist loaded with flavour, freshness, and a hint of spice that makes it stand out. Perfect for weeknight dinners or a quick family meal, this recipe will turn your ordinary rice into something extraordinary.

Ingredients:

  • 2 cups cooked and chilled rice (preferably a day old)
  • 250g boneless chicken, cut into small cubes
  • 2 eggs, lightly beaten
  • 1 small onion, finely chopped
  • 1 carrot, diced small
  • ½ cup capsicum (any color), diced
  • ½ cup spring onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional, for richness)
  • 1 tsp chili garlic sauce (for spice)
  • 2 cloves garlic, minced
  • 2 tbsp sesame oil (or vegetable oil)
  • Salt & pepper to taste

Method:

  1. Marinate the chicken cubes with a pinch of salt, pepper, and half a teaspoon of soy sauce. Pan-sear until golden brown and set aside.
  2. In the same pan, heat oil and add garlic, onion, carrot, and capsicum. Stir-fry on high heat for just 2 minutes (keep them crunchy).
  3. Push veggies to the side, scramble the eggs in the same pan, and mix them in.
  4. Add the rice, tossing quickly to avoid sticking.
  5. Stir in soy sauce, oyster sauce, and chili garlic sauce. Mix well.
  6. Add cooked chicken and spring onions. Toss everything on high heat for 1–2 minutes to give it a smoky “wok” flavor.
  7. Serve hot with extra chili sauce on the side.

Pro Tip: For a real restaurant-style taste, sprinkle a few drops of sesame oil right before serving it lifts the aroma instantly.
